Are You Cooked Out?

Dec 05, 2024

Retrieving favorite phrases from family members comes to mind quickly during the holidays. Gram used to say, "I'm cooked out! Tell me what to fix!" After spending so much time in the kitchen preparing favorites for the family and eating "weigh too much" in every sense, we get cooked out!

How about some easy to pull together dishes and ideas as we approach the end of 2024 and welcome 2025.

If you are still eating on left over meats like ham, turkey or pork, consider this easy nutritious marinated fresh vegetable side salad.

If you are anything like me, I have a tendency to add or subtract ingredients to recipes. What fun is it if you restrict creativity? I confess, I added some grape tomatoes to this one. You could add some snow peas or carrots as well. The marinade is easy and it is a great dish for diabetics and those who are getting ready to start some kind of New Years diet.

If you have a craving for a bit of beef, here is a roll up that is so good and it is not that hard to make. Just thin slices of beef lined with a piece of bacon and celery, onion, and carrot. Roll it up and cook it in broth with thin sliced potatoes and mushrooms. A whole meal in a skillet!

For those of you who have a bit of a sweet tooth and left over white cake or angel food, here is a quick sauce that takes me home to Pennsylvania. I used my homemade angel food cake, but I remember this little blue box of Jiffy cakes. We would bake the cake and top it with a hot caramel sauce.
What a memory.

I know that New Years is upon us as well and some of you love to make something special for your parties. Here is a lovely orange poppyseed cake that your friends will rave about. It has never failed me.

If you end up with left over cake just slice it thin and put the pieces in between wax paper and plop them into a freezer bag. In the next few months when you get a craving for a bit of sweetness, just thaw a piece and enjoy a cup of coffee and remember your party!

As always it is a joy to have you check out my recipes. If you have some favorites send me some pictures and I will be happy to use them in future newsletters. If you have fun stories, I don't mind sharing them with our friends and extended family.
May God bless you and yours as we jump into our new year together.
Happy New Year! Stay healthy and thankful.

Because God made us hungry for good food and His love and grace,
