Summer is so much fun for families. We live near a sports park where the parking lot is always packed and the excitement of screaming fans and families can be heard from our deck. I can only imagine how difficult it is to keep these active players fueled up since they burn up calories running those bases.

Make up these easy applesauce cupcakes and get creative by adding any of your favorites: raisins, dates, nuts, or berries. A great recipe from my dear friend and neighbor. Quick prep and a great breakfast or snack.

Did you ever hear of a pizzelle?

My Gram’s sister, Aunt Rachel, loved me. She was a retired obstetric nurse who delivered a lot of babies during her career. When she knew I wanted to be a nurse she took me under her wing, and I often spent weekends with her and Uncle Bill in Ohio. She lived beside the sweetest Italian lady who introduced me to the Italian pizzelle cookie. I bought a non-stick Pizzelle Baker. If you want a different type of crunchy cookie, this is the one. The flavor anise is like licorice. You either love it or hate it! Experiment with different flavors. When the cookies are warm, they are pliable and can be gently rolled into cones.

This cookie is so much fun. Easy to transport to games and activities. One batch makes about thirty cookies. You can always refrigerate the batter.

Tutti Frutti Ice Cream

This recipe comes with sweet memories and tears.
Years ago I cared for a lovely lady with the diagnosis of cancer. Some patients become fast friends expecially when you meet again and again. I worked on the IV team and when I started her IV’s for chemo, we talked about everything.
One day we talked about taking turns cranking home-made ice cream when we were kids. She said, "I've got the best ice cream recipe for Tutti Frutti ice cream." She took my phone number and promised to call.
I was so surprised the day the phone rang and it was Lois. That call is one of my precious treasures. She spoke openly about her fears, leaving her children, and the husband that she loved so much. We had the best talk. Lois is in heaven but she left us all a wonderful recipe.
I usually create a recipe card with a real photo. But I haven't made this ice cream in a while so when I do, I'll take a picture and create a download. Until them, I think you can print off my blogs. If not just get a pen and write it down!
Make it and share it with those you love. Laugh, take pictures, and make family memories for there isn’t anything that would thrill me and Lois more!

TUTTI FRUTTI

1 - 14 oz can of eaglebrand milk ¼ cup lemon juice
½ cup sugar 3 ripe bananas (mashed)
1 cup water 1 tsp vanilla
3 cup milk 1 - 8 oz can crushed pineapple with juice
1 – 11 oz mandarin oranges(drain) 1 - 6 oz can maraschino cherries (drain and cut in ½)
This custard does not need cooking.
Just place in the electric ice-cream freezer and enjoy!
