Freezer Slaw, Ice Cream & Cobbler
Last month I thought about selling my lonely Kitchen Aid Mixer. Changed my mind. We bought fresh cabbage and peppers at the local farm market and got to work.
Allen connected the attachment and wow did it shred the cabbage perfectly.
This is one of the best recipes ever for a crunchy vinegar slaw.
Such a pretty addition to any meal. To make it more colorful, use
orange, yellow, red, green, or Hawaiian peppers. When company shows
up unexpectedly it's a great bag to grab from the freezer!
Here's a crazy creative idea.
Sometimes we struggle to find a unique gift for friends who have
everything. Give a bag of freezer slaw! They will love you!
What about Homemade Ice Cream?
When I lived with my grandparents, my Uncle Cecil lived across the
road. He filled a little crank ice cream maker and my cousins and I
spent so much time turning that old handle round and round for about
a tablespoon of ice cream. An experienced Chef couldn't be more proud
of such a culinary delight.
I promised in a previous newsletter that I would create a recipe to download once we made Tutti Frutti ice cream. We got out Pop's old faithful White Mountain
ice cream freezer, scrubbed it, filled it up, did the ice and salt jiggle and dance, and nearly fell deaf as that little engine roared.
Such an appropriate memory for Allen and I. The last time we made this
ice cream, I had a party with nurses from my unit and Pop's lived with us.
He served in WWII in a tank batallion.
We made this batch on Independence Day 2025 and remembered Pops.
What a fun gentleman who absolutely loved me. He never had
a daughter and both my dad and grandad died in 1986. I felt so blessed that Allen shared his dad with me. And by the way, he loved ice cream!
In case you didn't know, a sweet cancer patient shared this ice cream recipe with me
years ago. I remember the day she called me to give me this recipe. She's been in heaven several years now, but some people leave quite precious memories that live
on for a lifetime. Enjoy her heavenly ice cream!
I know her family would love knowing she's unforgettable.
So is Pop. I bet you probably have fond memories connected to food and family in heaven too! Don't we all?

When I lived in North Carolina, one of my roomates and I drove to Georgia, bought a bushel of fresh peaches, put them in the trunk and drove home. Those were the days. We drove late into the night. When we popped the trunk the peach smell screamed, "And you thought you'd be going to bed?"
You guessed it! The peaches ripened in the sweltering heat of the unairconditioned trunk. Young and stupid we stayed up all night and morning peeling, slicing, and tossing peaches into the fruit fresh bath and freezer bags. Oh, the lessons we learn and laugh at ourselves when we get old!
Thought I'd share this, so you can laugh with me!
Truly, this recipe never fails. you can't go wrong with cobbler or pie.
Feel free to add blackberries or blue berries to the filling. This is great with a dab of ice cream or whipped cream or dream whip.
Also note you can always use a bit less sugar on any of the recipes. Allen and I have pulled away from sugar and so we simply reduce amounts in recipes and it never causes an issue with the results.
I need to add some protein to this month.
Allen has become quite a hot smokin' grill expert! Look at this bird!
Allen sprayed this guy with olive oil and rubbed it down with poultry rub.
He injected it with chicken broth and smoked it for about 10 hours.
The probe thermometer reached 167 to 170 degrees.
Look at that color! Moist and delicious protein is a must these days!
You probably noticed the pork tenderloin on the grill. If Allen is grilling, more than one thing is sure to be cooking! We have grilled the meatloaf, asparagus, and zucchini with onions and mushrooms.
I love to make an aluminum foil baskets filled with onions and julienne sliced
potatoes dotted with butter and sprinkled with salt, pepper, and garlic powder.
Mrs. Dash is also a great choice for seasoning for anyone reducing sodium content in their diet. Once a heart failure patient brought his Mrs. Dash seasoning with him to the hospital to show me the purple lid and green lid were his favorites. That would be the onion and herb and table blend. I so loved my job and my patients!
There are so many fantastic people in this world. And I've been blessed beyond
