Gluten-Free Cookie, Low Salt Sauce, & Shortcake

Who doesn't love a crunchy shortcake with berries and cream? This shortcake recipe came from one of my old Pennsylvania Grange Books and is perfect with strawberries, blueberries, or peaches. Those dear women never failed to put the crunch in crunchy. You can even spoon the batter into greased muffin tins to make individual cakes!

I am a certified food handler that allows me to sell baked goods at bazaars. Many people look for gluten-free baked goods. To be honest, I didn't know much about this request. I remembered people with Celiac disease required a gluten-free diet.

My natural inquiring mind takes me to one of my favorite research sites. I went to StatPearls and read up on Celiac disease. Here's my synopsis:

A protein found in wheat, barley and rye triggers an autoimmune response with severe GI symptoms. Untreated Celiac disease can cause irritation and damage to the lining of the intestines. Key symptoms iinclude weight loss and abdominal discomfort. Lab tests and examination will diagnose this disease. The Gluten- Free Diet (GFD) is reported to be necessary to allow for healing and prevent complications.

Does everyone on a GFD have the diagnosis of Celiac?

The answer is no. Some people only have intolerance to the gluten without the diagnosis.

So what baked goods can this diet include?

I found a cookie recipe made with almond flour and egg whites. I had no idea if it would be any good. My friend Ann is so good to me. She is my expert food tester. I know she will always tell me the truth! She loved this cookie!

This month I am giving you a couple more healthy choices. Here's another for those of you with high blood pressure or heart failure. It is a low-sodium pasta sauce recipe that I believe is the best I have ever made.

As with any of my recipes you always have the ability to add your own touch or meats. Enjoy this one with stuffed shells, spaghetti, or any type of pasta. I have
even added steamed zucchini and yellow squash. I believe we could cook it down
and use it for pizza sauce as well. This sauce freezes very well.
