Grandma's Banana Bread
May is one of those months that competes with winter holidays. Think of all the parties and celebrations this month. High school and college graduations, National Nurse's week followed by hospital week and chaplains week. Then of course there is Mother's Day and Memorial Day.
A month packed full of celebration that transforms your home into grand central station with starving humans of every age coming and going but always on the hunt for homemade snacks from your kitchen.
This months recipe blog highlights an elegant and easy to make dessert from my friend Amber. She generously scooped it out at the last meeting of our church bible study. I stood impressed with this stunning presentation in a lovely glass trifle bowl. It was so light and delicious.
She shared the recipe and I got so happy! It is so simple even I can make it!
Grab up your kids and let them help you crush and crumble!
Bananas suffer neglect when life gets busy.
Gram said, "Waste not, want not" when she spied the over-ripe bananas on the counter. Let's make banana bread! And we did. Such a great aroma and so easy to provide loved ones with a snack. Warm with butter or cold with milk, or even get those great philadelphia cream cheese spreads. I've even broken up slices and put them in my homemade yogurt!
If you have little loaf pans you can make some individual and wrap them with wax paper or freezer paper and toss them in the freezer. Quick breads are always an easy thing to have on hand. Easy to make and easy to keep.
The same principle goes for these orange muffins. I totally love these. I took them to a group of new nurses I have the privilege of meeting as a guest lecturer on loss, grief, dying and spiritual care. They loved these muffins!
So just a few simple things to try and to enjoy this busy month. If you know of a nurse, hospital worker, or chaplain be sure to give them a hug or buy one of my books and gift them! Don't you love subtle marketing methods!
