Keeping up to your diet of more fruits and vegetables? I sure hope so. Don't you love it when jeans get baggy? When you eat healthy, you have more time to write or play with your kids and grandkids.


Here's some great time-saving meals. Beef-spread, panko-crusted zucchini, and rhubarb-strawberry crisp!


I love a good beef roast. I threw this one in the crockpot in a frozen state on medium with a cup of better-than-bouillon low-sodium beef flavor. I added one cup each of diced celery, onion, and carrot. I'm terrible about exact timings. I just take a fork, stab and twist, and if it is fork tender, I am happy.
Beef is so versatile for Manhattans, pot pie, or stroganoff.

But what can you do with the left-overs?

Aren't you proud of me? I am sticking to my heart healthy diet.
I also did something different. I put all the ingredients to make the spread into
one of my favorite kitchen gadgets.

This made my spread so smooth. I love this chopper. If you don't have one,
you need one. I use it to crush pecans and walnuts for cookies and breads.
I also used my air fryer and made up a new squash recipe. I bet you
air frying experts have been doing this for years!

So good! Yes, there is a recipe to download, but it's rather skinny!
And of course I have to give you something sweet.
Allen and I went shopping before the winter storm and some beautiful Rhubarb called out to me. I looked up a recipe and made something I never tried before.
It did not last long in this house! Allen loved it.

If you know me well, I never add the amount of sugar these recipes call for.
Usually I subtract about a quarter cup and it helps. When you pull away from sugar, you don't need as much!


So enjoy these different recipes and I will keep trying new things so I have pictures to share with you.
