July 2026 Fun, Filling, and Fabulous Time-Efficient Fixins
If July rockets by like June, we will all be suffering whiplash! This month’s recipes can easily fit into any busy schedule: Zucchini Lasagna, Yogurt English Muffins, and Refrigerator Molasses Muffins.
Too bad “busy” doesn’t fill up hungry bellies. And we all know that a constant diet of fast food gets old fast!

The Zucchini Lasagna recipe is perfect this time of year. Gardeners will be plucking the zucchini soon. Allen and I have just one plant growing in a whiskey barrel, and with the deluge of rain we’ve had, blossoms will be popping out in the next few weeks.
My plan is to make up a couple batches of the Zucchini Lasagna and freeze some for later. I think I have recipes for zucchini bars, zucchini bread, and even zucchini chocolate cake hiding somewhere in my food blogs! Happy hunting for those of you who are brave enough to search!
The day I made these refrigerator muffins, a beautiful young girl from church helped me in the kitchen. She really loved these spicy muffins. So if you wonder if your middle schooler might like them, my expert muffin tester gave them high marks!

A friend of mine shared the yogurt English muffin recipe. Next time I make these I know I need to smash them flatter before I bake them, but they were delicious!
