June: Tarragon Chicken & Pie
Have you ever considered all the information we have at our fingertips when it comes to finding out the nutritional value of what we choose to put into our mouths? I Googled the herb tarragon. Wow, if all the research findings are true, everyone should be growing it, crushing it, or sprinkling it on our chicken, fish, and veggies every chance we get!

Can you believe research studies have found this fragrant herb can regulate blood sugar, reduce pain, decrease inflammation, prevent heart attack and stroke and help give you a restful night's sleep?
Don't you wonder how much tarragon these participants had to chew or swallow?What was the length of the study? How long was the study? Inquiring minds can check out the articles on PubMed and Healthline.
Why do I love tarragon?
I love the taste and the aroma. I love this herb even more since I read it helps sooth bloat and gas. Who among us, doesn't long for soothing gas?
Yesterday, at the grocery, as I tried hard to keep to my list, a sales sign snagged me. Those gorgeous strawberries somehow landed in my cart and then the unexpected tall stalks of rhubarb jumped in too. Visions of pie floated into my head and once home . . .
Oh, My - A Pie!

My crust recipe makes two crusts. So this pie solved a big problem. We found too many eggs in the fridge.
Have you ever done that? Bought a dozen when you already had a dozen?
So, we went through all the things we could make. Egg custard, egg salad, spinach salad with eggs, and you can see the crust made the decision for us.
Quiche Lorraine won!

If you are watching your fat and cholesterol, better only eat a sliver. Or you can gift it to a neighbor. Then again, you can always eat a hard boiled egg instead.
