Cooks love trying out new recipes, or not! When we fix the same things, it can grow tiresome. This month, I am like a test kitchen. Hopefully, you'll find a recipe that broadens your treasure trove!
I want to start with donuts. I love them, but I hate when they are fried. About twenty years ago I found this recipe for baked spiced donuts. I finally made them. They turned out great and didn't make too many!

Can't have a donut without a cup of coffee. Have you ever tried pour-over coffee? Allen and I recently became lovers of this delicious process. Here is our set up.

We have a grinder, an electric kettle, and the pour-over system. The flavor is amazing. When you go to a coffee shop, ask for a cup and see if you can taste the difference. It is well worth it.
How about a Spinach Salad?
I think we know more about nutrition today than our ancestors did. Google the healthiest salad greens and guess what? Research findings from all over the world rank greens for fiber, nitrates, vitamins and minerals. Spinach ranks high in vitamin A, K, and iron. Add oranges, onions, boiled eggs, and bacon to provide protein, vitamin C (which helps absorb the iron), fiber and some fat.
If you are watching your sodium, don't use a lot of bacon, or substitute with grilled meats or healthy nuts.

I tried a new pie crust made from almond flour. Of course, my husband loves the old faithful, but I do think it turned out quite good.

When you make this, the dough is terribly crumbly. I used some new utensils.

I pressed down the bottom with the spatula and then took that little round spoon and it was perfect to push the crumbs around the edges. I couldn't make a fancy fork or pinched ridge, but I think it turned out fine. I lined the bottom with slices of banana, covered it with vanilla custard and dream whip!

You can fill the pie crust with whatever cold pudding you please. The recipe actually called for real whipping cream and sugar but I reach for the dream whip which is easy and less fat. If you've never used it, you may want to try it!

We used it for a lot of our frosted Jell-o dishes growing up. This topping has no sodium, trans fat, or total fat, and only 2 grams of sugar and 10 calories. It just takes a little milk and vanilla. The recipe topping for this pie called for 3/4 cup heavy whipping cream and 1/3 cup of powdered sugar. Can you imagine? Nearly 800 calories, over 60 fat grams (41 saturated), 40+ carbs, over 40 grams of sugar, about 250 cholesterol, and nearly 70 mg sodium.
I rest my case! You can have two pieces with Dream Whip!
Enjoy the new recipes. I won't over whelm you! Hopefully, the weather will soon break and we will be weeding and planting after the next thaw! Try something new!
