More than One
It seems I always make more than one thing whenever I am in the kitchen. This week it was Greek yogurt, Meatloaf with Sassy Tomato Sauce, Mixed Veggie Casserole and Salmon Patties.
Do you make more than one thing? Do you ever try new recipes?
If you like plain greek yogurt, you will love this slow cooker recipe. We have made it with whole milk and 2 % milk. Of course the whole milk is the most creamy but the 2% is just as delicious with big blueberries.
We eat a lot of yogurt. When I was a kid it seems we ate a lot of cooked puddings and Jello. I even remember this stuff called junket. Are you as old as me? If my memory is accurate I think it came in orange and raspberry flavor.
Yogurt easily took the place of so many of our childhood favorites and it is good for us! The probiotics aid digestion and the vitamins and calcium help support bone health. Plus you can add your own fruits and sweeteners like a bit of honey.
Have you ever wondered what our grandmothers and great grandmothers would think about some of the spices and flavors they probably never knew existed?
Take meatloaf for example. We always topped our loaf with ketchup, but it never took on the sassy sauce I now make!
Basil and Oregano are quite the duo!
When you make this meatloaf recipe, you may wonder (like I did) how on earth can a meatloaf turnout without adding eggs? But it does!
Even if you want to stay with your favorite meatloaf recipe, you may love to add this sauce as an option for tomato lovers who sit around your table!
Some of us can never plan menus without vegetables. Don't you love the ability to create original veggie casseroles with whatever is in the fridge? I do that so often. Use what you have. I hate to throw out food and often we are so lucky to be able to freeze so many of our recipes. It is sometimes hard to cook for just one or two when so many recipes are made for families of four or more. This casserole can be prepared and frozen and then baked or baked and leftovers frozen!
And in our little Pennsylvania kitchen we ate a lot of salmon patties. The best treat of all was when Gram turned a muffin pan upside down and molded and baked little pie crust cups. Then she filled them with creamed peas and little new potatoes.
Thanks be to God for all the wonderful memories of great meals we have had the ability to enjoy throughout our lives.
Truly, we can make more than one thing at a time whenever we are in the kitchen.
