Who wants to spend time slaving over a hot stove when sunshine beckons? Toss these summer sweets together quick and share them at retirement, graduation, or neighborhood parties.
Most gardens produces zucchini like bunnies. No matter where I have taken zucchini bars, they are a hit. The cinnamon in the icing add a marvelous kick to the moist bars filled with nuts, coconut, and shredded zucchini. They freeze well too!

Chocolate-Nut Lovers Rejoice

My Aunt Mary's Hello Dollies satisfy the chocolate cookie monsters in our lives. I warn you they are deadly sweet so cut them into tiny sized bites.

These cookies are so quick to make. You can use whatever chocolate chips you love. I tend to savor dark chocolate. I love the research findings that more flavanols (anti-oxidants) which lower heart disease are in dark. Milk chocolate has less of these goodies and white chocolate none. Don't you love knowledge from a retired heart failure educator? Reduces a bit of guilt as you enjoy the sweetness! Also with these cookies you can use your favorite nuts!

If you want to try something crazy special make this pineapple-apple pie. Easier than you think. I confess it is my own experiment. Gram made the most delicious pineapple-apple preserves. No matter how I tried my efforts ended up as ice cream topping instead of jam. I even contacted an Amish man who makes and sells jams and jellies in the local grocery stores. Talk about kind, he took my recipe and attempted to replicate it for free. He shared a story of his babies being hospitalized after birth and how he and his wife loved and respected nurses.


Alas, the jam still wasn't like Gram's. There was a special apple tree and I have no idea what it was, but I think mystery apple makes all the difference.
So I decided to try pie. I think it turned out pretty good. You'll have to try it and feel free to use different apples. Let me know if you have success!
